Are your emotions out of control? Are you finding it
harder to get through each day because you've lost your
energy, mental clarity and enthusiasm for life? It could
be your hormones. Hormones are the body's messengers,
and they regulate the metabolic processes that keep
you alive, healthy, and sane. If for some reason (such
as toxins, stress, unhealthy lifestyle) your hormones
can be thrown wildly out of balance. Your whole body…including
your brain…can be affected, causing symptoms such as
PMS, mood swings or depression; stubborn weight gain;
prematurely aging skin; night sweats and hot flushes;
migraines; low libido; leaky bladder; fatigue; bloating,
and increased risk of breast cancer.
Men's hormones can also get out of whack, causing many
of the same problems, including prostate problems and
higher risk of prostate cancer.
One way to keep your hormones healthy is to eat wisely.
A healthy-hormone diet keeps your blood sugar and insulin
levels under control, nourishes your hormones, strengthens
your general immunity, and helps prevent inflammation.
Here are some ways to eat your way to hormonal health.
Eat more of these foods
Lots
of fresh vegetables and fruits every day, most of them
raw or lightly stir fried
Whole grains (such as brown rice, wholemeal bread etc.),
which are high in fibre as well as essential nutrients,
and slow down the flow of insulin
Foods high in essential fatty acids (such as quality
olive oil, nuts, fish - especially sardines, rainbow,
trout salmon, mackerel - flaxseed, and dark green leafy
vegetables, all of which help control the production
of inflammatory hormones
High calcium foods (such as raw almonds, dark green
leafy vegetables, cultured yogurt or organic milk)
Foods high in phytoestrogens, including tofu and soy
nut butter
Beans, pulses and lentils, and raw nuts, which provide
essential fatty acids, quality protein and fibre, which
helps to bind estrogen so that high levels do not circulate
in the blood.
Avoid or reduce these foods " Fried foods of all kinds
(a light sauté is fine)
Dairy foods (choose organic, and preferably, take most
of your dairy as cultured yogurt or fermented cheeses)
Red meat (eat a little only 3 times a week, or avoid
altogether)
Refined grains (white rice, packaged cereals, white
flour pasta and breads etc.), as these trigger rapid
production of the hormone insulin, which is followed
by the release of cortisone (another hormone) as the
blood sugar quickly drops
Sugar, particularly refined sugars, which upset the
blood sugar balance, 'confuse' proper hormonal activity
and encourage the growth of harmful bacteria.
If your hormones are already out of kilter, it may take
more than diet alone to restore the correct balance,
but these dietary steps are invaluable in bringing your
hormones back to health, and to help prevent hormonal
problems in the first place.

Sweet Satisfaction or Sweet Destruction: By Miriam
Young!
If you lack satisfaction in your life, you may be attracted
to quick sugar fixes like chocolate or cake. The quicker
and higher your sugar levels raise after you have had
a sweet treat, the faster and lower it will drop afterwards.
And once again, you will be left feeling agitated and
dissatisfied. Many women crave sugar when they are premenstrual,
yet sugar in excess can be a significant contributor
to pre-menstrual tension as well as menstrual disturbances.
Sugar (sucrose) is a carbohydrate that occurs naturally
in every fruit and vegetable. It is the major product
of photosynthesis, the process by which plants transform
the sun's energy into food. Naturally occurring sugar
in fruit, vegetables and unrefined carbohydrates are
fuels for the muscles, nerves and brain and are the
principal source of energy for all bodily functions.
The sugars in these whole foods are balanced with proper
minerals. Refined sugar however, (white and brown) found
in donuts, chocolate, ice cream, cakes etc, pass straight
into the blood stream in large amounts, shocking the
pancreas. Sugar over-stresses the pancreas, causing
hypoglycaemia. Honey in large amounts is also assimilated
into the blood stream very quickly, which may also result
in problems with blood sugar levels. Raw, unheated and
unprocessed honey however, (not found in your local
supermarket) contains minerals and enzymes and has an
anti-inflammatory effect, suitable for soothing a sore
throat and beneficial for stomach ulcers.
Most people do not realise that refined sugar actually
suppresses the immune system. Sugar interferes with
the ability of white blood cells to respond against
invading bacterial infections. Refined sugar upsets
the mineral balance within the body, depleting copper
and chromium (a mineral often lacking in diabetes) and
interferes with the absorption of calcium and magnesium.
Refined sugar can exacerbate arthritis and asthma and
has a marked contribution to the formation of kidney
and gallstones.
Children
So long as young children are not allowed to fall into
sugar addition, but are offered instead a varied range
of foods, they can usually be trusted to meet their
dietary needs intuitively. It is better not to force
children to eat, even if their appetites are small and
tastes restricted. Just keep the issue relaxed and offer
them a wide range of options.
Allowing children to eat too much sugar can seriously
contribute to hyperactivity, anxiety, difficulty concentrating
as well as crankiness. This may be because sugar stimulates
cortisol, a stress hormone associated with anxiety and
aggression. (Not to mention the effect of preservatives/additives).
Sugar can also exacerbate eczema and may decrease growth
hormone in developing children.
Candida Craves Sugar
For both adults and children, the most common imbalance
caused by excessive sugar intake is the proliferation
of Candida. Candida albicans is a naturally occurring
organism, living inside our intestines in balance with
beneficial bacteria. Too much sugar often leads to excessive
amounts of Candida. And in excess, Candida excretes
toxic metabolites that begin to degrade the intestinal
walls leading to 'leaky gut' and inflammation. Excessive
flatulence, bloating and diarrhoea for no apparent reason
are often a sign that Candida is prolific in the gastro-intestinal
tract.
In leaky gut syndrome, the deterioration of the Candida-ridden
intestinal walls allows the yeast and by-products and
other inappropriate food molecules to enter the blood
stream. Candida and its by-products now have access
to the whole body, including every organ. This is known
as Systemic Candida and can be life threatening if untreated
and is thought by some to be the cause of death in AIDS.
There are many women who suffer unbelievable discomfort
from recurring vaginal yeast infections and frequent
cystitis attacks (bladder infections), making not only
sexual intercourse, but also life in general a misery.
Candida is the culprit in the majority of these cases,
mainly affecting the female population. Candida can
also be a contributing factor to infertility and may
add to discomfort during pregnancy.
Constant candidiasis distresses the functioning of the
liver and may cause multiple allergies, not only to
foods, but to various chemicals and pollens also. Irritable
Bowel Syndrome, headaches, bad breath, fungal infections,
athletes' foot and sinus problems are some of the diseases
that can result.
Low energy and chronic fatigue is a major symptom of
Candida because one of its by-products is acetaldehyde
and this chemical creates ethanol as a by-product. Ethanol
causes fatigue as it destroys enzymes needed for cell
energy. It also causes the release of free radicals,
which increases aging. Depression and anxiety can be
mere symptoms of the underlying problem of Candida
Experiencing spaciness and forgetfulness, is not necessarily
a sign of old age, it may be because of excessive amounts
of Candida in your system!
The Importance of Minerals
If you crave sugar it is likely that as well as the
presence of Candida in your system, you may also have
some mineral deficiencies. The most effective method
of feeding and rebalancing the body that is mineral
deficient is by taking plant-derived liquid colloidal
minerals. Colloidal Minerals are excellent for people
who have organs congested with Candida and therefore
absorption difficulties. When your body is mineral balanced,
cravings for sugar disappear naturally.
Other Causes of Candida
Sugar, however is not the only culprit, causing Candida.
Antibiotics destroy both harmful bacteria and good bacteria.
When antibiotics destroy friendly bacteria it gives
Candida the ability to multiply. One of the most common
complaints of women on the oral contraceptive pill is
vaginal thrush. This is because the synthetic oestrogen
promotes the growth of yeast. Tap water also destroys
friendly bacteria, due to its high chlorine content,
resulting in Candida over-growth. Parasites, constipation
and diarrhoea all cause the proliferation of Candida,
due to the fact that the friendly bacteria are disrupted.
Yeast in bread, processed foods, alcohol, fermented
products and vegemite etc also cause Candida. Increased
stress levels and a weakened immune system can heighten
an already Candida-friendly environment.
Most of the Candida sufferers I have come across in
my own practice have disturbed or negative thoughts
and/or low self-esteem. It is important to observe that
negativity on an emotional level creates disharmony
in the physical body and visa-versa. In order for permeant
change to take place within an individual, it is important
that a person not only addresses their diet, but also
undertakes to heal him or herself emotionally. Visiting
a counsellor or healer may be useful as well as undertaking
emotional release techniques.
The Healing Crisis
Change of diet and the use of herbal medicine, is the
quickest, simplest and most powerful way I know to destroy
excessive Candida levels in the body. As the Candida
dies off in a person's system, they may experience what
is known as a 'healing crisis' this is when symptoms
temporarily become worse before they get better. After
a few days of the Anti-Candida Diet and/or herbs a person
may experience headaches, weakness and/or fatigue. Some
of the emotions a person may experience range from anger
to sadness, irritability to frustration. This is happening
because the Candida and toxins are coming to the surface
and being removed from the system. As toxins come out
of the body on the physical level, toxins in the form
of suppressed emotion rise out on the emotional level.
What is below so is above and visa-versa. The most effective
way to deal with excessive emotion is to take quick
cold showers. (Cold is yin and water is yin and the
double yin affect has the ability to draw away negativity
from the energy bodies). Lemon juice and many herbal
medicines also help to speed up the detoxification process
of Candida.
Sweet Foods of Joy
The taste 'sweet' is essential in Ayurvedic (Indian)
Medicine for maintaining balance in an individual. And
according to Traditional Chinese Medicine sweet is very
nurturing and feeds the Spleen/Stomach energy, mothering
and soothing us. (Ever desired a soy milk hot chocolate
when feeling upset or lonely?) The sweet however that
the Chinese and Ayurvedics are referring to is the sweet
obtained from foods that contain naturally occurring
sugar like rice, coconuts and dates.
Eating sweet food brings a great deal of joy to many
people. Joy is the highest nutritional component, which
we extract from our food. It is not wise to remove all
the pleasurable components from our diets permanently.
Diet is a personal issue and need not be over-coloured
by current social trends or advice from mainstream or
medical sources.
Sweet provides that all familiar emotional satisfaction.
But when 'sweet' is over consumed however, it may encourage
laziness, greed and dissatisfaction. For when sweets
ferment, they turn sour.

Short
and Sweet:Lime and Ginger Pannacotta with Fresh Lychees!
Ingredients
3/4 cup Australian thickened cream 1/3 cup caster sugar
2 kaffir lime leaves, bruised 2 teaspoon grated ginger
2 1/2 teaspoons gelatine, dissolved in 2 tablespoons
boiling water 1 1/2 cups Australian natural yogurt fresh
or canned lychees
Method
1.
Combine half the cream, sugar, kaffir lime leaves and
ginger in a saucepan and stir over low heat until dissolved.
Remove from heat and strain. Stir in gelatine mixture
and cool for 5 minutes. 2. Combine cream mixture with
yogurt. Beat remaining cream until soft peaks form and
gently fold through half the yogurt mixture then combine
with remaining yogurt mixture. 3. Divide mixture evenly
between 6 x 125ml lightly oiled dariole moulds. Cover
with plastic wrap and refrigerate until set. Invert
and serve with fresh lychees.
Notes
To release pannacotta easily from dariole mould, place
mould in a bath of hot water for 4 seconds.
